Cornflake Meatloaf

A delicious and moist ground beef meatloaf recipe, topped with a ketchup glaze, made with crushed cornflakes, onionsoup mix and finished with a golden brown exterior. Perfect for a cozy family meal or game day appetizer.

Ingredients

  • Meatloaf:

  • 2 lbs ground beef

  • 2 eggs

  • 1/4 cup milk

  • 1 oz onion soup mix

  • 1 tablespoon butter, melted

  • 1/2 cup Crushed cornflakes

  • 1/3 cup tomato sauce

  • Topping:

  • 1/2 cup tomato sauce

  • 1/2 cup ketchup

  • 1 tablespoon brown sugar

  • 1 teaspoon mustard

  • 1/2 teaspoon hot sauce

  • Decorative Toppings:

  • 1 tablespoon melted butter

  • 2 tablespoons crushed cornflakes

Instructions

  1. Preheat oven to 350F

  2. Line a 9 x 5 inch loaf pan with aluminum foil and spray it with cooking spray. Set aside.

  3. Pour the crush cornflakes into a large Ziploc bag and use a rolling pin to crush them.

  4. Combine the ground beef, eggs and milk in a large mixing bowl.

Add the onion soup mix, melted butter and crushed cornflakes to the bowl.

Mix all ingredients well by hand.

Scoop the meat mixture into the prepared loaf pan and press it out evenly.

Spread the remaining sauce over the meat.

Place pan in the oven and bake the meatloaf for 50 minute

Meanwhile, prepare the topping: mix the tomato sauce, ketchup, brown sugar, mustard and hot sauce in a small bowl.

After the meatloaf has been baking for 50 minutes, remove it from the oven and spread the topping evenly over the top.

Return to the oven and continue baking until the meatloaf has reached an internal temperature of 160F and the topping is just starting to brown.

Remove the meatloaf from oven and allow to rest in pan for 10 minutes.
